I am always trying out new recipes with overripe bananas, even though I have quite a few in my repertoire. Ever since I came across this recipe online, it has been on my mind to try out. I guess today’s the day!! This recipe is so simple even little kids can probably help in making it. Another little secret is that it has very simple ingredients that will most likely be available in every pantry. The best part is that it is sugar free, gluten free and very healthy! Shh, don’t tell your kids that!

* Cardamom pd or cinnamon pd (optional)
Steps:
1. Preheat oven to 350 degrees.
2. Mix everything (mashed bananas, peanut butter, chocolate chips and
rolled oats) together. Add in the cardamom pd. or cinnamon pd. to your
taste.
3. Using a tablespoon, scoop the mixture equally, and place onto the
baking tray.
3. Bake at 350 degrees F. for 15 - 20 minutes or until you see that the
edges are slightly brown.
4. Transfer the yummy Banana Oat cookies onto a cooling rack and cool for
10 minutes.
5. With this batch, I got 15 cookies. Quick, Yummy and Delicious! Enjoy
with a glass of warm milk.
Notes:
Substitutions:
* You can replace the peanut butter with almond butter or 2 tablespoons of
honey.
* Chocolate Chips can be replaced with raisins, or even dried cranberries if
you prefer tart cookies.
* I like it sugarless, but you can also add about a tablespoon of sugar if you
prefer.
These cookies definitely taste better if you use over ripe bananas, as they tend to be sweeter.
