Quick Raita

When you can't take the heat, what do you eat? RAITA, OF COURSE! In India, raita is used to cool the palate.Raita makes a great accompaniment for any meal. It can be a great topping on a salad, or a filling in a wrap too. So quick and so easy to make, and so soothing to the palate, and oh so perfect to cool and calm your mouth in case you have eaten something spicy.

This is the first of many easy raita recipes that I use. You will see the other recipes on this blog soon.


Basic Red Onion Raita - Chop 1 small red onion finely, add salt to taste and to this add 1 cup of plain yoghurt (more if you like it) and some finely chopped cilantro. Done!! Goes very well with spicy dishes like Biryani or Pulao/Pilaf, and curries. Today I served the raita with a spicy Instant Pot Quinoa Pulau.

Notes: It is almost like tzatziki, but instead of thick greek yoghurt, plain yoghurt is used for raita to make it thinner. Raita can be eaten with rice, curries, pulao or biryani. I have also used it in sandwiches, wraps and even in tacos. I make a spicy Chicken Tinga Taco, and this raita is just the right addition for those who want to bring down the heat a notch, or to cool their palate. Yoghurt surely helps aid digestion and soothes the stomach, and is quite rich in nutrients too.

Soothing is a great word to describe raita. PR is a huge fan of Biryani and relishes the raita as an accompaniment. Are there other veggies you would recommend adding to raita?

Abe, I have made raita with different veggies over the years. Boondi, cucumber, onion, beetroot, carrots, zucchini, also blanched and finely chopped spinach to name a few.
