Summer squashes like zucchini, banana nut squash, yellow squash etc. make lovely additions to our meals, sometimes quickly stir fried just with garlic, or grilled or made into chips.
Zucchini and other summer squash can be turned into some tasty appetizers, main dishes, as well as desserts. Many friends and family grow it, and this year I had tried to grow it as well. Unfortunately, many of my tender plants became meals for the bunnies that seem to have made a home in my yard. I am really fortunate, that I got some really fresh zucchini from a loved one's yard. Last night, I decided to make Parmesan crusted Zucchini which both Hundi and I love.
This Parmesan Crusted zucchini makes a great appetizer or is good even as a side accompaniment to a meal. This tastes really good with a hint of garlic and olive oil. Do give it a try and see how you like it.
Parmesan Crusted Zucchini
Recipe
INGREDIENTS
* 4 large zucchini or summer squash
* 2 teaspoons garlic powder
* 1 teaspoon chilli powder
* 1/2 tsp Haldi (turmeric)
* 1/3 cup parmesan cheese, freshly grated
* 2 tablespoons olive oil
* Kosher salt and freshly ground black pepper, to taste
PREPARATION
1. Preheat oven to 400°F.
2. Slice squash into 1/4 inch rounds and add to a large bowl. Add olive oil, garlic powder, chilli powder, salt, and pepper, and toss to coat.
3. Arrange squash on a rimmed baking sheet in a single layer. Sprinkle evenly with parmesan cheese.
4. Bake until just tender, 9-10 minutes. Turn broiler on high and place the tray on a top rack, and broil until golden brown, 2-3 minutes.
Notes:
- Alternatively you can also coat the spiced zucchini with Panko bread crumbs to make it crispy.
- Sometimes I also add in some indian spices like Garam masala, hing or even sambhar powder for an added zing

This recipe was so easy to make tasted super yummy , did not add breadcrumbs. Next time will try with bread crumbs
