Instant TaikiLe ambaDaw/Vada

TaikiLaw/Cassia Tora/Senna Tora leaves can be used to make many tasty preparations. Details on these leaves can be found on another TaikiLe post in my blog. I have already posted the recipe for fried TaikiLe Dangar which is always a big hit in my family. Another favorite is this instant ambaDo I make. No grinding of any paste, I just mix in the ingredients and fry, air fry or bake. My son in law requested me to make it, this past weekend, and needless to say, he loved it and so did my daughter. This preparation can also be made with drumstick leaves or methi or even cilantro/coriander leaves. These Vadas can be made with Fenugreek/methi leaves, or Drumstick/Moringa leaves too, and tastes just as good.

TaikiLe AmbaDo two ways - Deep fried and Air fried (Can you guess which is fried and which one is air fried? *Answer on the bottom of this post)


Recipe

Ingredients:

2 cups TaikiLe (Cassia Tora/Senna Tora) washed and chopped leaves

2 tablespoons Besan (Chickpea flour)

2 - 3 heaping tablespoons Rice flour

1 tablespoon Rice Rava or Wheat Rava/Sooji (I always add rice rava as I am Gluten free)

1 teaspoon Chilli powder (please adjust according to your taste)

1/2 tsp Turmeric (Haldi) powder

1/4 tsp Black Pepper

1/4 - 1/2 teaspoon Hing (Asafoetida) powder

1/4 teaspoon Tamarind concentrate

Salt to taste


Steps:

  1. Wash and finely chop the TaikiLe leaves and keep aside.

  2. Mix together all the other ingredients, and add in the leaves. Add extra rice flour if needed. Mix well.

  3. Adding little water at a time, mix everything together well until it all comes together into a mass. Keep aside for 10 minutes.

  4. Make into small ambaDe*/ vadas.

  5. Heat oil on high. Lower to medium heat and fry the AmbaDe*/Vadas to a golden crisp.

  6. Yummy AmbaDaw is ready to eat!!

* AmbaDe = Plural for AmbaDaw

Air Fry or Baking Mode:

  1. If you are air frying or baking, preheat air fryer or oven to 400 degrees F.

  2. Place in the air fryer or in a baking tray in the oven. Brush the tops with oil. You may use any cooking oil. (I used avocado oil)

  3. Keep an eye on them. After about 10 minutes, flip them over and brush with oil again.

  4. They should be ready in another 10 minutes. Oven temperatures vary, so if they are not crisp or golden to your liking, keep for few minutes longer. The oven batch might take a couple of minutes extra.

(*Answer - The bowl with 5 AmbaDe/Vadas has the air fried version)
