Girmit - this street food snack comes from Hubli/Dharwad Area. Feel like a spicy Chatpata snack - do try this. I love it as it has a little bit of sweet, tangy and spicy, like Bhel Puri which I love.
Recipe
Ingredients: • Oil - 2 tsp • Mustard seeds - 3/4 tsp • Jeera - 1/2 tsp • Curry leaves - 1 sprig • Garlic - 1 tsp (finely chopped) • Green chilli - 2 (finely chopped) we like it spicy, you can add as per your palate • finely chopped Onion - 1 cup + 1 cup (for the mix in, I prefer red onion) • Tomato - 1 cup finely chopped • Coriander leaves - 4 tsp minced • Turmeric powder - 1/4 tsp • Chilli powder - 1 tsp • Tamarind pulp - 1/2 cup (or you can also use 1/2 tsp of concentrate) • Jaggery - 1 tbsp (or more depending on your taste) • Salt according to taste • Puffed rice - 1 - 1.5 cups (per serving)
Steps:
To make tamarind pulp, take 1/2 cup of water and 1/2 tbsp tamarind. Completely dissolve it in water and strain it.
Take a pan. Add oil. Splutter mustard and jeera.
Add curry leaves, garlic, green chilli and saute for a while.
Add 1 cup onion and saute until it's raw smell goes off.
Add chilli powder, turmeric powder, and salt.
Mix well and saute for a minute.
Add tamarind extract and jaggery, stir well.
Cook for 2-3 minutes until the mixture gets condensed and slightly thick.Keep this mixture aside.
To assemble the Girmit:
Add some minced red onion, some tomato, minced coriander leaves, some (about a tbsp) prepared mixture, and mix well.
Add in 1-1.5 cups puffed rice or Rice Krispies (churmura).
Mix together and serve immediately.
The mix gets soggy so eat immediately.
Notes:
Some suggestions for additional mix-ins: roasted peanuts, sev, pomegranate arils, putani (Roasted chana) Dhal powder.
A variation - some people add in hing to the seasoning and omit garlic. You can also add both. There is no right or wrong way, whatever suits your palate.
