Egg Stumbler




Today’s brunch was a Mangalore Street food special - “Egg Stumbler” A tasty Mangalore specialty that can be fixed in a jiffy as a snack or a lazy lunch/dinner😊

It’s a Mangalorean version of scrambled eggs and toast or Baida Akuri on Toast, only spicier and also the toast pieces are added into the scramble. Interesting, hunh!!

 

Recipe


Ingredients:

  • 3 Egg

  • 2 slices of wheat bread.

  • 1/4 cup chopped onions

  • 1/2 cup diced tomato

  • 1 chopped green chilli

  • 1-2 cloves chopped garlic

  • 1/4 teaspoon jeera seeds

  • 1/4 teaspoon fennel seeds

  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon garam masala powder

  • 1 teaspoon sambar powder

  • 1 teaspoon Ketchup

  • 1 teaspoon Chili sauce

  • 2 sprigs of coriander leaves

Steps:

  1. Cut 2 slices of wheat bread into 1/2 inch cubes.

  2. Dry roast on low heat till crisp. Sprinkle a pinch of salt and some sambhar powder (or chilli pd.) This is definitely optional. Set aside.

  3. Heat 2 tsp oil in a pan. Season jeera (cumin seeds) and some fennel seeds.

  4. When they brown, Add chopped onions, chopped green chilli, chopped garlic. Sauté for a few minutes.

  5. Add turmeric powder, garam masala powder, sambhar powder (optional), salt to taste, and diced tomato. Sauté well.

  6. Add some ketchup and also some chilli sauce (optional) Mix well.

  7. Reduce heat to med low and crack eggs raw eggs beaten well into this mixture. (Reserve a tbsp or so of the beaten mixture)

  8. Add salt to taste and Stir well. When the eggs are almost set add the roasted bread cubes. Mix well.

  9. Add in the reserved beaten egg. (This is so your preparation does not get dry)

Serve with a generous sprinkling of coriander leaves. Yumm!!
