Churmuri Jaggery Balls/OonDaw/Laddoos

Updated: Nov 30, 2020

Charmuri/Puffed Rice OonDaw has been a childhood favorite with me and all my siblings. My mom would make these and put them away on a shelf that was designated for all the snacks (sweet or savory) she made for us. We loved all the snacks she made, her containers were always like a bottomless pit, there was always some snack or another always made and stored. I really admire and appreciate how she was constantly making snacks for us. I cherish those lovely childhood memories of us sitting and watching her making all the different goodies. Perhaps, that's where I get my enthusiasm and love for cooking!

Charmburi/Churmuri is sort of like Rice Krispies. The balls/oondaw are like an Indian version of marshmallow crispy, except they are in the form of a ball. Jaggery (Unprocessed sugar) is used in the recipes to replace the marshmallow for the sticky texture to bind the laddoos. Replacing sugar with jaggery is a healthier option, as it helps in maintaining the electrolyte balance and helps prevent water retention thanks to its potassium content. It contains antioxidants and minerals like zinc and selenium, so it helps boost resistance against infections, hence building stronger immunity.

These laddoos are made with a special sticky variety of jaggery, it is cooked with half the quantity of water over medium heat till a sticky two thread consistency is achieved.

Churmuri Laddoos

Recipe

Ingredients:

• 6 cups Churmuri/Puffed Rice

• 2 cups jaggery

• 1 cup water

• 1 tsp cardamom powder

• Some chopped cashews (optional)

• 2 tbsps ghee

Steps:

  1. Dry roast the churmuri/puffed rice till nice and crispy. If the churmuri is fresh and crispy, I sometimes skip this step.

  2. Make a 2 string consistency syrup with the jaggery and water. To test for the consistency, drop a teaspoon of the mixture into a cup of cold water. The lump that forms should be firm to the touch.

  3. Add in the churmuri, chopped cashews if using and cardamom powder and the ghee. Mix well.

  4. Roll into balls when it slightly cools. (Grease your hands with ghee if needed) Enjoy!

Notes:

It is very important to use the right kind of jaggery. What works best for me is Desi Gur, that I buy at our local Indian store. You can also buy the Chikki Gur too. Remember to make the 2 string consistency syrup.
